Anita’s Fruity and Crunchy Red Cabbage, Grapes and Chicken Salad

Delicious sweet-tangy, crunchy salad, bright in color with Umami flavor. Dressed with a creamy and smooth white Miso Vinaigrette that brings an Asian inspiration to any salad. Enjoy and share the LOVE!

Ingredients

tomatoes sliced, cut in halves

white grapes, cut in halves

avocado slices

1 small head Red Cabbage, thinly sliced

3 mini cucumbers, sliced

Roasted chicken, shredded

Miso Vinaigrette

1/2 cup of avocado oil

3 Tablespoon rice vinegar

1 Tablespoon white miso (fermented soya beans)

1 Tablespoon Agave or honey

1/4 teaspoon toasted sesame oil

3/4 teaspoon soya sauce

freshly ground black pepper

Preparation

  1. Use a medium bowl, whisk together avocado oil, miso, rice vinegar, agave, sesame oil and soya sauce until creamy and smooth.
  2. Pour over a bed of red cabbage, mix and serve into a platter. Top with tomatoes, avocado, white grapes, and chicken.
  3. Sprinkle with freshly ground pepper over the top. Enjoy and share the LOVE!
