
Anita’s Easter Bunny Potato Pie Simple but amazingly Delicious
A great delicious addition to Easter brunch or lunch! Light and crisp, filled with lean seasoned meat with herbs and flavorful warm spices. Happy Easter, enjoy and Spread the Love!
Ingredients for Mashed potatoes:
4 Russet potatoes, peeled and quartered
1/4 cup of whole milk
1/3 teaspoon salt
3 tablespoons of butter
Preparation:
- Boil potatoes till tender. Mash and seasoned with salt. Add, room temperature butter and milk. Mix until all well combined.
Ingredients for Filling:
1/2 pound of lean ground meat
1 small onion, diced
1/3 cup of toasted walnuts, finely chopped
1 Tablespoon butter
1/2 teaspoon dried mint
1/3 teaspoon cinnamon, ground
pinch of nutmeg
1/3 teaspoon black pepper
1/2 teaspoon garlic powder
Preparation for Filling
- Pre-heat oven at 375 grades Farenheit. Prepare a glass pan greased with butter. Set aside.
- Use a medium size pan, and at medium-high heat brown ground meat with butter. Add diced onions and walnuts. Season with salt, pepper, cinnamon, garlic powder, nutmeg and dried mint. Set aside.
- Spread half of the mashed potatoes on bottom of your greased glass pan.
- Spread meat filling over.
- Top with rest of mashed potatoes evenly. Decorate the top as you like using the point of a knife as I did, my Easter Bunny :))
- Bake for 30 minutes. Then broil for 5 minutes till golden brown. Enjoy and spread the LOVE!
