
Anita’s Refreshing Homemade Blueberry Balsamic Vinaigrette Chicken Salad
Delicious, super fresh, sweet and tangy vinaigrette that transform this salad from simple to extraordinary Umami flavors just made with few ingredients.
Ingredients for Homemade Blueberry-Balsamic Vinaigrette
1 cup of fresh blueberries, washed
1 Tablespoon of juice of a lemon
1/3 cup balsamic vinegar
1/4 cup of extra Virgin Olive Oil
1 teaspoon honey
Freshly ground black pepper and salt TT(to taste)
Preparation
- Use a saucepan and cook blueberries at low-medium heat with honey for about 5 minutes. Add lemon juice and balsamic vinegar. Let it simmer and reduce till thickened for about 10 minutes at low heat. Remove from heat. Let it cool and drizzle over salad. Sprinkle with salt and pepper. Drizzle olive oil over your salad and enjoy. Spread the Love!
