Anita’s Avocado Toast with a Twist

Super Yummy, easy, fun and nutritious toast with a very unique blend of  flavors with a twist on Tapenade. Share the LOVE always, and during this Valentine’s Day :))

Ingredients

Homemade Tapenade

1/2 cup of Kalamata Olives, pitted

1 garlic clove, minced

1 teaspoon of white wine vinegar

1 anchovies fillet, minced

1/2 teaspoon honey

2 Tablespoon sun-dried tomato

Olive oil

Pinch of salt ( anchovies and Kalamata Olives are salty, no need to add if you prefer)

Preparation

1. Pulse all ingredients into a mini food processor until mixture forms as a paste. Add salt. Set aside.

For the Toast

Olive oil

juice of 1/2 of a lemon

1 avocado, smashed with some lemon juice

cherry tomatoes, cut in half in hearts

Halloumi Cheese, cut in hearts (if you desire)

  1. Heat at high a heavy-based skillet and place slices of baguette bread brushed with olive oil on both sides. Chargrill for 2 minutes on each side. Remove from heat and spread the Tapenade over the top. Spread avocado over Tapenade and arrange with tomatoes and cheese . Decorate with some cucumbers all around the plate. Enjoy and spread The LOVE!

 

Note: For later use, place Tapenade in a glass jar, drizzle with some olive oil and place into refrigerator. Will last from 3 to 4 weeks.
