Anita’s Easy Unstuffed Grape Leaves in a Bundt Cake

No time for rolling each grape leaf by hand in this busy life of us. Instead, make the same traditional delicious savory ground beef and rice filling, layering it all around into a Bundt pan lined with the grapes leaves and then baked into the most comfort, nutritious, and  hearty beautiful meal. Perfect for any dinner or Holiday gathering with your family and friends. Spread the LOVE. Enjoy!

Ingredients

1 pound grape leaves jarred, rinsed and stems removed

1 cup of Arborio rice, unrinsed

3/4 pound lean ground beef

1/2 cup of fresh dill, chopped

1 teaspoon cinnamon, ground

1/4 teaspoon all-spice, ground

1/2 teaspoon salt

1/3 teaspoon pepper

2 Tablespoon Olive oil + 1 tablespoon

1 1/2 -2 cups chicken broth

1/4 cup fresh lemon juice

1-2 potatoes, cut in thick slices

Preparation

  1. Preheat oven to 375 grades Farenheit
  2. Prepare your grease Bundt cake pan 9×13 inches. Set aside
  3. Use a large skillet and cook beef in the olive oil at medium-high heat for about 5-7 minutes or until brown and no liquid is running out of beef. Incorporate rice, stir.
  4. Seasoned with salt, pepper, cinnamon, and all-spice. Add in fresh dill and stir till all combined. Set aside.

5. Line the bottom and sides of the Bund cake pan including the center with grape leaves, allowing to hang over the edges of the pan.

6. Spoon over the mixture of rice-beef on the bottom all around in an even layer.

7. Place sliced potatoes over the rice-beef mixture.

8. Make another generous layer with the rice-beef mixture over the top.   

9. Fold all the overhanging grape leaves over the filling to enclose it. Add extra grape leaves if needed to seal the top.

10. Pour 1 1/2-2 cups of chicken broth all around with 1/4 of cup of fresh lemon juice. Place Bundt-pan over a Baking pan so the grape leaves won’t burn and cook slowly. Drizzle with one Tablespoon of olive oil over the top. Bake in center of the oven for about 35-40 minutes. Remove from oven and allow to cool for about 35 to 45 minutes to unmold easily.

11. Cut carefully around the center to be able to release your beautiful Grape leaves Cake. Decorate with half lemon slices. Enjoy and Spread The LOVE!
