Anita’s Portobello Mushroom Chesseburgers
This Ultimate Large Portobello Burger is meaty and very satisfying, easy to make on stove-top. You definitely won’t miss the beef. Topped with Swiss cheese, caramelized onions, peppery arugula and buttery avocado. A healthier but delicious choice that you won’t regret. Enjoy and Spread the LOVE!
Ingredients
2 Portobello mushroom caps(wiped cleaned and stems removed)
2 slices of Swiss cheese
1 small red onion, sliced
1/3 teaspoon sugar
4 ounces of baby arugula
1 avocado, sliced
Salt and pepper To Taste
Brioche buns (toasted)
1 Tablespoon mayonnaise
1/2 teaspoon yellow mustard
1 teaspoon of ketchup
olive oil spray
1 Tablespoon of olive oil + 1 teaspoon of butter
1 teaspoon of balsamic vinegar
Preparation
- Whisk together sauce: mayonnaise, mustard, ketchup, and balsamic vinegar together. Set aside.
- Use a small sauce pan and add olive oil and butter at low heat. Add sliced onions. Sprinkle with sugar. Seasoned with salt and pepper and cooked for 15-20 minutes until completely tender and cooked. Set aside.
3. Prepare a grilling pan over the stove at medium-high heat. Spray with olive oil. Place mushroom cap seasoned with salt and pepper on one side for 2-3 minutes. Then, flip to the other side for another 2 minutes. In the same pan you can toast the hamburger buns.
4. Place a slice of swiss cheese over each mushroom cap, wait till melted.
5. Assemble by spreading your pink sauce, a bed of baby arugula, Portobello cheesy mushroom cap, topped with caramelized onions and avocado slices. Enjoy next to some sour cream-onion chips. enjoy and spread the LOVE!
