Anita’s Delicious Scallops and Shrimp Pasta

This light and super flavorful pasta dish it’s rich and creamy without using any cream. Enjoy and share the LOVE!

Ingredients

16 to 20 shrimps, clean and deveined(jumbo size)

15 Sea scallops

2 tablespoon salted butter

2 Tablespoon of Olive Oil

1 box of Fettuccini pasta, cook according to package

1/2 cup pasta water, reserved

1 charred roasted bell pepper, cooked under broiler and diced

4 cloves garlic, minced

1/4 teaspoon salt

black pepper to taste

1/4 white dry wine

fresh basil leaves

juice of 2 lemons

Preparation

  1. Heat at medium high-heat butter and olive oil in a large pan. Add minced garlic and lower the heat.
  2. Incorporate shrimps and scallops. Cook for 10 to 12  minutes, turning once. Season with salt and black pepper. Add charred bell peppers.
  3. Add wine and let it simmer out for 2-3 minutes. Add in cooked pasta, mix well and incorporate pasta water and lemon juice.
  4. Stir and mix well. Sprinkle some basil leaves. Serve and enjoy!
