Anita’s Crunchy, Creamy and Light Cucumber Sandwich

The go-to refreshing Light Lunch. Loaded with crisp cucumbers, with a creamy Homemade Arugula-Artichoke spread perfect to use as a Dip for fresh vegetables too.

Ingredients for the Spread

1 (8 ounces) jar Artichoke hearts, drained well

1 garlic clove, minced

2 cups of fresh Organic Baby Arugula, cut fine

1 string of fresh oregano leaves

2 Tablespoon fresh parsley, minced

1 teaspoon juice of fresh lemon

1/2 cup cream cheese

Salt and pepper TT(to taste)

1 teaspoon Plain Yogurt

Whole wheat Sandwich bread or any other of your choice

Cucumber, unpeeled and thinly cut in rounds

Preparation

  1. Place cream cheese into a food processor, add artichokes, arugula, parsley, oregano, garlic clove,  and pulse until well combined.
  2. Add fresh lemon juice, plain yogurt and seasoned with salt and pepper. Pulse again until all ingredients are well combined and creamy.
  3. Spread each slice of  the bread with the cream cheese spread mixture. Arrange the sliced cucumber rounds on top of one side of the sandwich bread. Top with remaining bread and press slightly.
  4. Cut sandwiches in halves and enjoy. Spread the LOVE!
