Anita’s Delicious Arugula-Avocado Salad with Light Blue Cheese Dressing

Super easy to make. Creamy, Tangy but Incredibly light and delicious Blue Cheese Dressing made with Yogurt that complement the peppery taste of the Arugula. Great for salads, spreads on sandwiches or as a dip for vegetables and chicken tenders!

Ingredients

1 Avocado, diced and sliced

cherry tomatoes

Arugula

For the light Blue-cheese dressing

1/2 cup of plain yogurt

fresh juice of 1/2  lemon

1 Tablespoon light mayonnaise

Blue cheese crumble, mashed some

1 Tablespoon Extra Virgen Olive Oil

1 Teaspoon low fat milk

Whisk all together. Toss Arugula leaves, and avocado pieces with dressing and some whole crumbles of blue cheese. Fast and delicious. Enjoy and Spread the LOVE!
