Anita’s Light Teriyaki Baked Salmon

Super healthy delicious meal of fresh Orange teriyaki baked Salmon with sweet red onions over a light fluffy turmeric rice.

Ingredients

6-8 Salmon fillets with no skin on

2 large red onions, sliced into rings

1/2 cup fresh Orange juice

zest of one orange

2 cloves of garlic, chopped

1/2 cup of Tamari or regular soy sauce

2 Tablespoon sesame oil

1 teaspoon Ketchup

2 Tablespoon molasses

1 teaspoon ginger, grated

2 cloves of garlic, minced

1/4 cup of lemon juice

pinch of salt

pinch of cayenne pepper

Preparation
  1. Preheat oven to 400 grades Farenheit. Use a glass baking pan and put a layer of onion rounds on bottom of the pan. Place salmon filets on top.
  2. Use a bowl and prepare the sauce by mixing together orange juice, zest of the orange, grated ginger, molasses, ketchup, minced garlic, lemon juice and tamari sauce. Pour sauce over salmon fillets.
  3. Seasoned with salt, pepper and cayenne pepper.
  4. Drizzle with sesame oil. Place rest of red onions rings on top of each salmon fillet.
  5. Bake for about 25  to 30 minutes until salmon is cooked and flaky. Serve for dinner or lunch next to veggies and turmeric rice. Enjoy, and spread the LOVE!
