Anita’s simplest and most delightful Lemon Pasta (Pasta al Limone)

This Italian Lemon Pasta is packed with fresh lemony-peppery, silky and creamy sauce with cheesy Pecorino Romano goodness that coat each pasta noodle. Less, sometimes is more, when it comes to combine few ingredients, but packed with so much flavor. Dinner is serve in NO TIME! Enjoy and Spread the Love!

Ingredients

1 pound of Fettuccine (I used a lemon infused Italian Pasta), cooked according to package instructions

1 1/2 cup of Pecorino Romano Cheese, grated

4 tablespoon of butter

1 Tablespoon Olive oil

juice of 2 lemons and zest

5 cloves of garlic, minced

1 cube of vegetable broth

1 teaspoon black pepper

Salt to taste

1/4 cup of heavy cream

Preparation

  1. Bring a large pot with vegetable cube broth and water to a boil. Cook pasta according to your package instructions but still with a bite al dente.
  2. In a large skillet, add butter, olive oil and sate garlic and garlic till tender
  3. Add lemon juice and zest
  4. Incorporate 1/4 cup of the pasta water into the skillet
  5. Add cream and let it simmer at low for couple minutes
  6. Incorporate pasta, season with salt and pepper. Toss well to coat each pasta noodle . Add grated Pecorino Romano Cheese. Mix all until well incorporated.
