Anita’s Simple but Complete Cucumber Pistachio Salad Delight

Super Delicious fresh vibrant Arugula salad with a light-lemony vinaigrette and cucumber juice. Topped with toasted pistachios for a perfect crunch. A light, bright, and full of simple and healthy ingredients. Enjoy!

Ingredients for the Cucumber-lemon Vinaigrette

juice of 1 lemon

1 teaspoon rice vinegar

2 cucumber, peeled and quartered

1 teaspoon of pure honey

1 1/2 teaspoon pomegranate molasse

Toasted pistachios for garnish and texture

2 boiled eggs and cherry tomatoes

4-5 cups of fresh Arugula

Place all ingredients into a blender or food processor and blend together, drizzle at the end with 2 Tablespoon of olive oil. Mix with arugula leaves. Share and Spread the LOVE!
