Anita’s Delicious Upside-Down Caramelized Banana Cake
This Banana loaf bread cake is magical! Gooey, caramelized bananas with such a warm spiced and spongy batter. Delicious for a breakfast or any coffee/tea break:))
Ingredients
For the topping:
2-3 bananas, sliced into 1/4 inch rounds
1/2 cup of granulated white sugar
For the cake:
1 1/2 cup of All-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup of light brown sugar packed
1 o2 bananas mashed
1/4 cup of vegetable oil
1/2 cup of plain yogurt or sour cream
2 eggs
1 teaspoon curcumin
1/2 teaspoon cinnamon,ground
pinch of nutmeg
Preparation
- Preheat oven to 350 grades Farenheit.
- Grease a loaf pan with butter and dusted with granulated white sugar.
- Lay on top banana rounds.
- Use a large bowl and beat together milk, sour cream, eggs and mashed bananas.
- Incorporate all-purpose flour, brown sugar and spices. Whisk well until well combined.
- Pour batter into prepared pan on top of bananas.
- Bake cake for about 45-50 minutes until toothpick inserted in the center of cake comes out clean.
- Let cake cool for about 5-10 minutes in pan, and then turn into a platter.
