Anita’s Healthy Twist on Vegetarian Eggplant Fatteh

Once you give this Heathy Recipe a try, you and your guest will be hooked! This is typically a perfect Brunch Vegetarian dish but,  it is also enjoyable for lunch or dinner. Traditionally the Eggplants and bread are fried, instead I prefer to bake them, which makes it healthier, easier and less messy. It can also be made by adding meat. Enjoy the layers of Flavor!

Ingredients

2-3 eggplants, cut into 1 inch cubes partially peeled

1 teaspoon salt

1/3 teaspoon garlic powder

1/3 teaspoon smoked paprika

1/2 teaspoon black pepper

2 Tablespoon Olive Oil

Preparation

  1. Pre-heat oven to 400 grades Farenheit. Lay a pan with foil paper. Place all cut eggplants into a ZIP-LOG bag and drizzle with olive, add salt, pepper, paprika and garlic powder. Toss in bag and place into the pan. Roast for about 25 minutes until golden brown. remove from oven and set aside.

 

2. Use a cutting board, and cut 2 Pita bread into squares. Toss in with 1Tablespoon of Olive Oil. Place into a baking pan into the pre-heated oven.

3. Remove when they’re golden and crispy. Set aside.

4. Toss a can of garbanzo beans with 2 Tablespoons of butter in a pan. Add 1/3 teaspoon of ground cumin. Set aside. Add pine nuts to the pan and toast them for 3-4 minutes until golden brown. Set aside.

5. Making the Tahini Creamy Yogurt Sauce:

2 cups of Plain Yogurt

1/2 cup of Tahini paste

1/2 teaspoon pomegranate molasse

3 cloves garlic, minced

1/2 cup of fresh lemon juice

1/3 cup of water

Salt to taste

Preparation:

  1. Add yogurt to a medium bowl and whisk for couple minutes till creamy. Add minced garlic, tahini paste, fresh lemon juice, pomegranate molasse and salt. Stir and add water to thin it out.

To Assemble:

Add a layer of Pita bread toasted, diced roasted eggplant on top. Drizzle with Super Creamy Yogurt sauce. Garnish with garbanzo beans, toasted pine nuts and chopped parsley. I omitted the drizzle of melted ghee over the top as I wanted to keep it lighter and healthier. Enjoy it as soon as is plated and Spread the LOVE!
