
Anita’s YUMMY Vegetarian 3 Cheese and Spinach Baked Empanadas
These Empanadas are super healthy and easy to make. I’m using this time a Pre-made dough for baking. The delicious mixture of frozen spinach, parmesan cheese, mascarpone and ackawi white cheese make it so light. No need to cook this filling as it will in the oven.
Ingredients
1 package of 12 empanada dough for baking
For the Filling:
1/4 cup of mascarpone cheese
1 cup of Ackawi cheese, diced
1/3 cup of Parmesan cheese, grated
pinch of nutmeg
1 egg, beaten
Salt and pepper TT (to taste)
Mix all together.
1 egg with 1 Tablespoon of water to brush top, beaten
Preparation
- Heat the oven at 375 grades Farenheit. Prepare a large baking sheet with parchment paper. Lightly spray top of paper with oil.
- To assemble empanadas, place 2 tablespoons of filling in the center of each disc of dough.
- Brush the edges with little water. Fold the disc in half over the filling. Press the edges with your fingers to seal together. Press the edges using a fork and decoratively seal. You can do the shape you prefer. Place on the prepared baking sheet.
4. Brush empanadas top with egg-wash. Bake for 25 to 30 minutes or until golden.
5. Let them cool for 5 minutes and transfer into a platter. Enjoy!
