Anita’s Easiest and Irresistible No-Bake Strawberry Roll Cake

Do you want to impress your beautiful MOTHER on this Mother’s Day! This No-Bake sponge cake is so so good as pretty as it is delicious, it is very easy to make too. Made with fresh Strawberries and lady fingers. Roll the Love, and enjoy it!

Ingredients for Strawberry Syrup

1 -2 pound strawberries, sliced

1/2 cup granulated sugar

2 Tablespoon of fresh orange juice

1 teaspoon of Strawberry liqueur or vanilla extract

1/2 cup water

Preparation

  1.  Place sliced strawberries in a medium size bowl with sugar, orange juice, water and liqueur. Using a fork or a potato smasher. Press on the strawberries to squeeze out as much as juice as possible. Place in the refrigerator.

Ingredients for Cream and preparation

Beat together in a large bowl 1 cup of heavy cream using an electric mixer at medium speed until stiff peaks form. Add slowly 1 1/2 cup of confectioner sugar and 1/2 teaspoon of strawberry liqueur and beat again until fluffy and very smooth cream has formed. Add 2 tablespoon of the strawberry syrup and fold into 1/2 of  the whip cream. Place into the fridge.

Ingredients for the Cake Roll

1 (7 ounce) package of any Italian crisp lady  fingers of your choice

Assembling

  1. Using a the surface of a clean cutting board, line a long plastic wrap, allowing 6 to 7 inches of wrap to pass the edge of the board.
  2. Remove from fridge strawberry syrup. Dip each lady finger into this syrup for 5 seconds and arrange side by side lengthwise with no gaps. You’ll need total of 12 lady fingers.
  3. Remove Whip cream from refrigerator and spread evenly over the soaked lady fingers.
  4. Using the plastic wrap on one end, carefully start rolling touching closely forming a log till the end. Place roll into a serving platter. Chill roll in the refrigerator for about 1 to 2 hours.
  5. Remove from fridge. Unwrap roll carefully. Spread reserved whipped cream over the roll to coat all around.
  6. Sliced strawberries to decorate side of the roll cake and some whole strawberries over the top. Spread the Love and Enjoy!
